I love hummus and as you hopefully know tahini is a main ingredient in hummus, but what about making tahini cookies! First heard of this idea for a cookie at the local farmers market cafe and after having one, my mom and I decided to make them for ourselves. 1/3 cup Earth Balance (I use coconut oil because I'm not for the whole fake butter stuff)
1/2 cup organic sugar
1/2 cup tahini
2 Tbsp almond or soy milk
1 tsp vanilla
1 1/4 cup whole wheat flour
3/4 tsp baking powder
1/4 tsp fresh-ground salt (3 or 4 turns of a salt grinder)

1. Preheat oven to 350 F.
2. Cream Earth Balance (coconut oil or any other substitute you may have used), sugar, tahini, almond/soy milk, and vanilla.
3. In a separate bowl, sift together whole wheat flour, baking powder, and salt.
4. Add dry ingredients to wet, and mix until combined.
5. Roll into balls (about 1 1/2 inch large).
6. Bake for 7-10 minutes, or until lightly browned on top and medium brown on the bottom.
