Olive Oil and Maple Vegan Granola


You literally need a bowl, the ingredients, and a baking sheet to make this granola. That's it. It's super easy and can be adjusted to your liking! If you're missing any ingredients you can substitute anything else you want to include in your granola. Ingredients:
  • 3 cups old-fashioned rolled oats
  • 1 cup raw pumpkin seeds, hulled
  • 1 cup raw sunflower seeds, hulled
  • 1 cup unsweetened coconut chips
  • 1 1/4 cup raw pecans, left whole or coarsely chopped
  • 3/4 cup pure maple syrup
  • 1/2 cup extra-virgin olive oil
  • 1/2 cup packed light-brown sugar
  • Coarse salt


Mix all ingredients in a bowl
 
  • Toast in oven and rotate as to make it evenly toasted on all sides 



  1. 1.Heat oven to 300 degrees.
  2. 2. Mix all ingredients and spread on a baking sheet. Toast granola in oven for 30-45 minutes. Rotate and stir every 10-15 minutes.  
  3. 3. Remove granola from oven and season with more salt to taste. Let cool completely before serving or storing in an airtight container for up to 1 month.
    1. Enjoy as cereal with milk, on it's own, or in yogurt!
