Almond Butter Cups

These are so good that even my non-vegan friends have a problem making themselves stop eating them. Super easy and delicious! The original recipe is from Oh She Glows! The ingredients lists and everything can be found here: http://ohsheglows.com/2013/07/19/raw-almond-butter-cups/ 

I changed the recipe a little just by skipping the raw almonds and just using almond butter. Nothing against almonds it's just that 
1. Didn't have enough raw almonds 
2. I'm a college student and therefore I am lazy and prefer the convenience of almond butter. 

If you skip the almonds and just use almond butter as I did then just monitor how the almond base looks. Too sticky, add more oat. Too dry, add more almond butter. 

After mixing almond/almond butter with oats, add in remaining ingredients of coconut oil, cinnamon, maple syrup, etc.

Separate oat/almond mixture into muffin pan. You can use a regular or mini muffin pan, but I find when made with a regular muffin pan the cups are thinner and therefore break more when being removed.

Most times I pop the muffin pan with the almond butter base into the freeze to harden while making the chocolate sauce for the top just to cut some time, but if you prefer to wait for the chocolate sauce before putting them in the freeze that's fine too!
Add ingredients for the chocolate sauce: cocoa powder, maple syrup (or agave), and coconut oil.

Top the almond butter base with the chocolate sauce and pop muffin pan back into the freezer to harden the top!
 It's much easier to pop them out if you use a silicone muffin pan, but if you don't have one on hand just do as I do and use a spoon or knife.

These are especially convenient as snacks and easy to grab when running late for class! They're also extremely easy to make since you don't need to monitor anything. Just pop them in the freezer and on your next study break take them out!
