Roasted Golden Beet Hummus

Ahh hummus. Every non-meat eater knows the ever special bond we hold with hummus. It's packed with protein from the garbanzo beans- THE ANSWER TO THE "Where do you get your protein" question- and it's the most delicious thing ever so...
This hummus recipe is a favorite of mine and the original recipe is from The Minimalist Baker where red beets are used!
I kept the recipe exactly the same, just switched it up and tried it with some golden beets rather than red!

Roast the beets at 425 degrees for about an hour 
You'll need tahini, a small roasted beet peeled and quartered, 15 oz can of  garbanzo beans, two garlic cloves, salt and pepper, zest from a lemon, and juice of half a large lemon. ( A majority of the lemon flavor is in the zest.)
Mince the peeled and quartered beet just until in small pieces.

Add remaining ingredients except the olive oil.
Drizzle olive oil in as the last step.
