Baked Falafels

I love falafels and these can easily be made in advance to be eaten for the next few days for quick easy lunches and dinners.

Ingredients: 

  • 1 bundle fresh parsley
  • 3 large cloves garlic
  • 1 large lemon (juiced)
  • 1/2 tsp sea salt + black pepper
  • 1 1/4 tsp cumin
  • 1 15-ounce can chickpeas, rinsed and drained
  • 1/4 - 1/2 cup ground raw walnuts, pecans, almonds or oat flour (I used oat flour)

Instructions: 

1. Add parsley, garlic cloves, lemon juice, salt and pepper, and cumin to food processor. Mix until well combined. 
2. Add chickpeas and pulse until just combined. 
3. Transfer to mixing bowl and add in oat flour, raw walnuts, pecans, or almond meal. 
4. Draw an X in the dough and separate into four patties. Place patties in the freezer to firm up for about 15 minutes. 
5. Bake at 375 F for 30-40 minutes. Flip halfway through to bake evenly. 

Store in the fridge.

Lavender Vanilla Snack Bites

These just seem like the most perfect afternoon coffee snack! Lavender is heavenly and these are mildly sweet for a great dessert or snack!

Ingredients: 
  • 1/2 cup coconut 
  • 1 cup walnuts
  • 1 cup almonds ( I did a mix and match and used whatever I had available)
  • 3/4 cup dates 
  • 1-2 tb melted coconut oil
  • 1-2 tb agave 
  • 1/2 tsp salt
  • 1/2 t cinnamon
  • 1/8 tsp ginger powder
  • 2 tsp vanilla extract
  • 1 tsp dried lavender
Instructions:
1. Mix the coconut and nuts in a food processor and process until throughly mixed.
2. Add in dates and process until a dough starts to form.
3. Add in remaining ingredients.
4. Roll into snack bites. Try a tablespoon measure if you want them to be uniform. 
5. Place in freezer to firm up.
6. Store in plastic container in fridge.

Optional Chocolate Dipping Sauce:
IF you want you can also dip the snack bites in chocolate sauce. I made my own vegan sauce from cocoa powder, coconut oil, and a little agave. If you chose to add the chocolate sauce, I suggest placing the snack bites back in the freezer after to firm up before placing in the fridge.
